I have the app on my fire and need to add more folders but do not know how. I can change the names of the few they have but need more.

At the bottom of the screen inside the Book Collections application, there is a little box with lines in it. It is located between the back arrow and search magnifying glass. This little box is the menu button. If you tap it you will see some additional options including the new folder option.
